For the Ube syrup, essence is the only real option where I live. I added 2.5 teaspoons per litre of 1:1 simple syrup and it does the job 60ml/2oz Gin 20ml/0.7oz Lemon juice 10ml/0.33oz Orgeat 15ml/0.5oz Pineapple juice 15ml/0.5oz Ube syrup 2 Mint leaves Garnish with lemon twist & pineapple leaves
