Breakfast to go for an early start- egg muffins made the night before. It’s basically an omelette only portioned into cupcake moulds.
To make 12:
8 eggs
12 cherry tomatoes cut I to quarters
1/2 cup chopped ham
1/2 cup grated cheese
Beat the eggs and mix in the cheese. Split the tomatoes and ham between the moulds. Pour in the egg and cheese mixture. Bakes in the oven at 190 Celsius for 12-14 mins.
Don’t forget to grease the mould for easy release of the muffins!
