Do you mean whether they hold the hook with its end above the hand like a pencil or under the palm of hand like a knife? Both of those holds can be used for knitting or for crochet so I'm not certain that is what you mean but maybe you are doing one of those for crochet and one for knitting. If so, I have known those with both holds that crochet tight and loose, so I think it's more likely to be how you're tensioning the yarn or if you're moving the yarn up the hook to a wider point on the neck
