rhodes pianos and analog synths are still used in professional recording environments and appear on professional releases, all the time.
they aren’t as common as they used to be and of course people use emulators and sample packs now too, but music has not really “moved on” from these instruments any more than it’s moved on from pianos and violins.
imo the sound of specific instruments is more important than that of specific recording formats.
