I do appreciate getting to clean out "um"s and "uh"s, but then I leave in a two minute bit of delaying telling my players a relevant piece of information as I try to make it up, all while talking in character

I like to edit out the part where our long suffering DM (you) starts to talk but is cut off. Through the magic of editing it becomes a natural pause into which a player (me) respectfully steps.
