If u really like your golf, then St Andrews (biased local) is a must. The links (and town) possess an inexplicable magic. I’ve played there with many tourists and they’ve all described it as a #memory. There are 6 golf courses on the links , whilst the Old is a ballot and not always guaranteed, Jubilee, Castle and Eden are all fantastic and can be booked. The New Course is turn up an play, so high chance of a game. There are several other stellar courses all within an hours drive too.

I'm going to suggest you think about the north of England en-route to Scotland. I highly recommend Alwoodley in Leeds, Dr Alister MacKenzie's first course, you can see where the 13th at Augusta got it's DNA from, it's a fantastic course. Across the road is Ryder Cup venue Moortown, there's also SandMoor next door, at one point their Scratch team was about plus 20 handicap. Further north is Ilkley, Ganton (another Ryder Cup host). Then on the Northumberland coast Dunstanburgh and Bamburgh Castle.
