The tricky thing is that for just about every vendor they're delivering a customized service, so it can take a lot of information to give an accurate price. The other thing is that there can be a lot of things to consider besides just the price. Going into planning it's hard to know about costs, and I think a lot of couples have unrealistic expectations which can lead to getting unreliable vendors that they think are a "deal".
