Because she wasn't killing witches to keep him alive. Why she does it is never explained, but it seems to have more to do with gaining power (and addiction to power) than anything else.

I interpreted this as a way to cope with grief ? She lost her son and it probably just felt good, like a drug. Maybe I’m reaching but the trilogy definitely has themes regarding grief and coping mechanisms.
