Pasteurisation is 72 degrees celsius. Boiling is 100 degrees. More nutrients are destroyed at higher temperatures for a longer time than pasteurisation.

And pasteurization is for a much shorter time. It is quickly brought to 72c and then dropped just as quickly back to low temp
