Alcoholics drink steady all day. Once they get to a point alcohol no longer gives them the intoxicating feeling they drink even more. That's why they refer to some people as a functioning alcoholic. They can be over the legal limit all the time because their body became used to that feeling.

Missouri, I had a worker that got a DUI on a holiday evening. Wife bailed him out and drove him home. He got up the next morning to get to work at 6:00am. He got another DUI on way to work. Rough night

Not sure how alcohol works in Missouri, but in England plenty of people are over the limit the following morning after a night out. They’re surprised about how long it stays in their system.
