Why is most Chinese food in Europe so bad? I hear great things about the diversity of food in China but most Chinese restaurants (that I’ve experienced) use the cheapest possible ingredients.

Because for a long time many chinese restos were opened by the first generations to make money rather than to really spread good food culture. Also most europeans didn't know much about china so it was easy to scam them or change traditional chinese dishes to match it to european palette (>chinese pragmatism) the overpopulation in china has also led to many frauds in grocery production, cuz its impossible to produce that much hq foods for that amount of hungry mouths.

Paris has good Asian food including Chinese. And their ingredients didn’t taste cheap to me.

1) in most countries, the immigration policy is more welcoming if you set up a business in the host country. It’s a business model, there is a whole industry supplying ready-made bases for building your “Chinese” restaurant 2) tailored to local taste buds, especially “restaurants” set up according to point 1). There are many “authentic” Chinese restaurants in Europe, even outside of China Towns, but they are more expensive as the ones built on the “immigration model” of point 1)
