Usually their way is stupid and/or overly fussy. Sweating alliums doesn't need preheat. Sliced shallots are valid, adding chile flakes first blooms them and infuses the fat. Neither the flakes nor garlic will burn with decent heat control because shallots are mostly water. Also sounds like a guy who cooks everything on high
