Hi I'll answer this from a farmers point of view who has turkeys. We can eat their eggs and they lay them. But they SUCK at it. Laying on them, trying to incubate babies, I had a hen that laid on 4 potatoes rather than her 13 egg clutch. Turkeys lay eggs in clutches, around 12-15 eggs at a time (which accounts for only a 2 week time frame about twice a year) and if the turkey hen doesn't lay on the eggs you have to take them an incubate yourself because they are dumb. They just don't lay often

Also they have a much thicker shell. We used to have turkeys and getting the egg out of the shell required a very intense whack. It tasted fine, but we only got 3 from one turkey that year and they don’t lay them nicely in the nest, they just kinda drop them in their preferred napping place

Too much protein

I love all the farmers and their factual reasons as to why not. Personally, I figured it was because unlike chickens, turkeys can fight lol
