It has been a while I didn’t play with T65 flour, I love the clean white color of the flour and the smooth silky texture during S&F, it makes a good pairing with Pan Syokunin flour but it is also a challenging flour to handle, I normally keep the ratio at 30% of the total flour volume for easier control
