I feel like if anyone ever did a perfectly faithful film adaption of Dracula, they'd be accused of "not doing anything new" with the story, when in reality, that would be the newest thing they could do.

I agree. Coppola came fairly close in many respects. (I did not mind the prologue or the final scene. Still. . . . There's also a British version from the 1970s, starring Louis Jordan. It was shown on PBS. It also came very close to the novel. But you're right. The same could be said of Frankenstein: The True Story, a 2-part TV movie also from the 1970s, starring James Mason, Michael Sarrazin, Jane Seymour, Michael Wilding. Close, but no cigar.
