I didn't know that, great technical name, really rolls off the tongue! I remember learning that it happens because the roof of your mouth freezes and its a survival reflex. I also discovered that when brain freeze happens, if you spread your tongue out over the roof of your mouth, it can minimise the pain. Works a little, I'd say.
