I want to know why green olives come in resealable jars, but black olives come in cans and can’t be resealed.

In the 1920s there were a series of botulism outbreaks associated with canned California ripe olives (specifically caused by their ripeness making them more hospitable to bacteria) and to resolve the problem they had to start canning at much higher temperatures that glass vessels couldn’t withstand

Separate from the jar vs can question, fun fact if you have pitted black olives they are probably green olives that are treated with something to turn black. Real Kalamata olives are too soft to hold up to the pitting process so they are sold whole.

You can buy black olives in jars in Australia. You can always put them in a jar after you have opened the can. Just keep them in the liquid they came in.
