My grandmother used to do the same thing. She only used salt for grilling pork belly bbq but it tasted so good, no joke! It’s like the simplicity of it all makes you appreciate the actual taste of pork. Then when she made adobo, she only used soy sauce and garlic, no bay leaves or anything else.
