This is interesting. I do love a simple rice, beans, kale + tofu/tempeh dish but… I am also Mexican and I love to make vegan tacos, asado, sopitas “con huevo”, pozole, menudo, etc. I can’t stop liking the foods I grew up eating just because I’m vegan.
