This sounds like such a good trip! I haven't been to Hong Kong or Vietnam yet, but I was in Bali late 2022 and loved it. I highly recommend renting a bike and driving north to see more of the remote parts. I stayed up by Mount Batur for a couple of nights and it was incredible. The people were lovely. Enjoy every moment of it!
