Mistborn! Great entry point and a great story.

Skyward is a fun, YA, easy read, I found it very enjoyable. For Cosmere stuff, the first Mistborn series is phenomenal. I still haven't found a fantasy heroine I like as much as Vin. She's kickass, but has plenty of personal struggles. For standalones, Tress of the Emerald Sea is whimsical and fun, or Warbreaker is a bit more serious, but has an interesting premise.
