I was thinking the same thing recently while rewatching The Force Awakens. Rey, who’s apparently flown nothing more complex than a speeder, is able to jump into the cockpit of a starship that’s arguably more complex than an F-16, and fly it like she’s had 20 years” experience. The obvious hand wave is “the Force”, which somehow imbues Luke, Rey, and Anakin with an instinctive ability to fly these things. I'll be honest, people getting stressed about continuity, lore or, indeed, common sense, in SW films always amuses me. There's no great world-building, they're not Tolkien or Herbert. Lucas borrowed extensively from other films and made stuff up as they were going along. The original 3 don't hang together if you look too closely, the prequels and sequels never stood a chance. I still love them though, I just don't take them remotely seriously!
